1000g packet of Barba Stathis okra extra
500g packet of Barba Stathis Grated Tomato
1 cup of Barba Stathis DIced Onion
2 tbsp of Barba Stathis Diced Garlic
3 tbsp of Barba Stathis Chopped Parsley
5-6 spring onions, finely chopped
3 tbsp of fennel, finely chopped
1 tsp of paprika
1 small spicy pepper (optional)
A few grains of allspice
1 cup of dry white wine
A pinch of salt, freshly-ground pepper
- Heat a cup of oil in a pot and sauté the finely-chopped onion over a medium heat.
- Once the onion has softened, add the spring onion, fennel, parsley, tomato, garlic, hot pepper (optional), allspice and allow the sauce to boil for around 35 minutes.
- Meanwhile, fry the okra with the rest of the oil for 7-8 minutes and set aside.
- Pour the wine into the tomato sauce, add the okra and salt and pepper and boil for approx. 30-35 minutes
